Eggplant Meatballs

1 medium size eggplant, peeled and chopped
1 clove garlic
1 tsp extra-virgin olive oil
2 tbsp almond meal, more as needed based on eggplant size
1 egg
1 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp red pepper flakes
1/2 tsp freshly ground pepper
1/2 tsp Himalayan sea salt
Optional: 2 tbsp fresh parmesan cheese

1. Preheat oven to 350
2. Peel eggplant and cut into cubes, place water in the bottom of pot and steam or boil eggplant until soft
3. Remove eggplant and squeeze out excess water
4. Place eggplant in a bowl and combine with ingredients
5. Line a baking sheet with slipat or parchment paper
6. Roll out balls (they will be soft, it’s okay- they don’t have to be perfect!)
7. Bake for 15-20 minutes until tender and formed
8. You can at this time either make your own sauce or use whatever red sauce you like
9. When meatballs have cooled, place in pot of sauce until serving

These will NOT be hard like a beef or turkey meatball; they are meant to melt in your mouth and break apart with your fork!
